To create the eye I highlight the middle.
Turn the middle to 180 degrees.
Hold shift to make a new polygon and turn it back round 180 degrees
and move it back up.
Use edge to selete the vertical
edge using ring, so it highlight them
all and select connet, then use polygon and select all the faces inside the new
edge and drag them out, then hide it.

now select the iris and from the drop drown menu choose normal and right click, collapse to, this will marge the two layer together in the modifier panel.

Create a sphere and use the align tool to align the sphere at the pivot point of the eye ball.

Use the scale tool to make the sphere flat.
Open the material editor and start to apply material.

At the iris apply uvw map and bit map fit.
